What is Isomaltulose?
Isomaltulose is a 6-O-α-D-Glucopyranose-D-Fructose, it is a crystalline reducing disaccharide, it is bond from glucose and fructose α- 1,6 glycosidic. The molecular formula is C12H22O11•H2O. Isomaltulose crystal contains 1 molecule of water and rhombic crystal. Its appearance is similar to that of white granulated sugar. The crystal is slightly thinner than white granulated sugar and does not appear crystalline after water loss.
