What is Pullulan?
Pullulan is a water-soluble polysaccharide produced by fermentation of sucrose and glucose by microorganisms (Aureobasidium sporogenes). The repeating units of maltotriose connected by a-1,4 glycosidic bonds are linked by a-16 glycosidic bonds. It is a linear polysaccharide formed by polymerization and is a tasteless and odorless white powder.

Pullulan Production Process
1. Strain culture: After ultraviolet light and nitrosoguanidine mutagenesis, the strains that secrete less melanin and have a high conversion rate are screened out, and then cultured in sterilized seed culture media to obtain seed liquid.
2. Strain fermentation: Pour the seed liquid and sterilized fermentation medium into the fermentation tank, then add glucose and ferment to obtain liquid pullulan.
3. After subsequent steps of flocculation, filtration, decolorization, concentration, and drying, white powdery pullulan is obtained.
4. Packaging and storage.
