What is Celery Extract/Powder ?

Cultured celery extract is a concentrate prepared from celery. The extracts come in powder or liquid and are commonly used as a food preservative in "natural" deli meats and organic bacon instead of sodium nitrite because celery extracts are "naturally derived nitrites".  Regardless, cultured celery extracts are biochemically identical to sodium nitrite when added to deli meat.
Nitrites are found naturally in sea salt and in many vegetables like spinach, beets and celery. Ingesting small amounts of nitrites from eating vegetables is harmless. But celery extracts are created in a lab when the plant's juice is combined with bacterial cultures to create a concentrate that is much higher in nitrites.
This celery concentrate is then used as an alternative preservative because it extends shelf life and mimics the same effects as sodium nitrite, providing the classic pink colour and distinctive salty flavour of classic deli meats. Products that contain concentrated vegetable extracts can have as much or more nitrites than foods that list sodium nitrite on their label. As mentioned, nitrites are relatively inert when consumed from eating vegetables, but when nitrites are added to meat and then cooked, a chemical reaction can occur that creates nitrosamines, the cancer causing compounds. Here is a simplistic explanation: Nitrites + Meat (amino acids/protein) + Heat = Nitrosamines.

1. A Powerhouse of Many Potent Antioxidants:Celery contains caffeic acid, ferulic acid, saponin, tannin, and kaempferol. Two of its other more notable components are apigenin and luteolin. These are all compounds found to have powerful antioxidant properties.Meaning, they prevent oxidation in the body, which is behind the creation of free radicals. Free radicals aren't always harmful, but in great numbers, they can damage and kill human cells.

The researchers also noted a 14% reduction in the rats' blood pressure levels. A separate study on rats concluded that celery helped reduce LDL cholesterol levels.In a human study, researchers investigated celery's antihypertensive effects. It involved patients with mild to moderate high blood pressure. Six weeks after, patients who consumed celery seed extract had lower blood pressure.

 

The application of Celery Extract/Powder

Celery seed has been used as medicine for thousands of years in the Eastern world. During ancient times, Indian Ayurvedic medicine used celery seed to treat colds, flu, water retention, poor digestion, different types of arthritis, and certain diseases of the liver and spleen.

Today, celery seed is used mostly as a diuretic, meaning it helps your body eliminate water by increasing urine output. Celery seed is also used for:

• Treating arthritis and gout
• Helping reduce muscle spasms
• Calming the nerves
• Reducing inflammation
• Lowering blood pressure

There are no human scientific studies that show whether celery seed helps treat these conditions or any others. Studies do show that celery seed acts as a mosquito repellent.

A few animal studies suggest that celery seed extracts may help lower blood pressure and cholesterol, as well as protect the liver from damaging substances such as high doses of the pain reliever acetaminophen (Tylenol). But again, researchers do not know whether those effects apply to humans.

Researchers have found that people who eat a diet rich in lutein, found in celery, spinach, broccoli, lettuce, tomatoes, oranges, carrots, and greens, were less likely to develop colorectal cancer. However, celery was just one part of their diet. So it could be celery, another food, or some combination of foods that lowered their risk of cancer.
