What is Papain?
Papain, found in the latex of unripe papaya (Carica papaya) fruits, is a mercapto protease that increases the rate of biological changes, such as ripening of the fruit. Not only that, papain is a vegetarian and vegan friendly protease and is non-GMO. Papain is a cysteine protease that is characterized by its ability to cleave peptide bonds in proteins. Papain consists of a single polypeptide chain with three disulfide bridges and a sulfhydryl group, which are necessary for enzyme activity.

Instructions for Use
Papain is soluble in 10 mg/mL of water. Immediately prior to use, the enzyme is usually diluted in a buffer containing ~5 mM L-cysteine. Activators/stabilizers include ethylenediaminetetraacetic acid, cysteine, and dimercaprol. Papain is stable for approximately 6 months at 2-8°C. Do not freeze aqueous suspensions.
