Industrial crystalline fructose is a product obtained by isomerization, separation, refinement and crystallization of glucose produced by starch hydrolysis, or by separation, refinement and crystallization of fructose and glucose produced by sucrose hydrolysis.
 

Pure fructose is colorless crystal, melting point of 103 ~ 105ºC, soluble in water, ethanol, insoluble in ether

The solubility of crystalline fructose in water is higher than that of sucrose and glucose. It is suitable to be added to various foods, such as beverages and fermented foods, and the viscosity of aqueous solution is relatively low, so as to facilitate processing, storage and transportation.
